I too have plenty of out-sized courgettes! I’ll be very happy to let you have some (440)!
You turn your back one day, go to sleep for the night and the little critters have turned into big brutes the next day!
Very thin slices coated with some olive oil, lemon juice, pepper, salt and garlic, grilled for a few minutes makes a nice snack. Otherwise there is always the option to use them as a ‘filler’ in a wholesome vegetable soup and freeze it for those cold winter days.
You could try courgette and mint soup it’s yummy. Freezes well too.
