– Enter the Horticultural Show on Sunday
– Bake a cake (see last week’s Bake Off’s extra show or ask Lynette for her Chocolate & Zuccini cake recipe)
or my favourite
– Adapt a recipe for Marrow & Ginger jam, using courgettes instead, this is useful if they have got too big.
I feel the same with my runner beans and kale. Happy to do a swapsie as I dream I’m living The Good Life. Tom and Barbara Good eat your heart out… or your veggies!
I too have plenty of out-sized courgettes! I’ll be very happy to let you have some (440)!
You turn your back one day, go to sleep for the night and the little critters have turned into big brutes the next day!
Very thin slices coated with some olive oil, lemon juice, pepper, salt and garlic, grilled for a few minutes makes a nice snack. Otherwise there is always the option to use them as a ‘filler’ in a wholesome vegetable soup and freeze it for those cold winter days.
You could try courgette and mint soup it’s yummy. Freezes well too.
This post is making me super hungry!
I think we need a vegetable exchange.
I have courgettes (obviously) , french beans and tomatoes.
